This exciting new theme is all about BACON!
Locally produced bacon from Metzger Meats in Hensell is our favourite high quality bacon. Thick cuts made with natural spices make a difference.
What’s on the menu? We’ll start with a Spicy Bacon Caesar as our feature cocktail. Bacon Jam is a combination of bacon, onions, brown sugar, coffee, and balsamic all slowly simmered until it’s thick lick jam. What a way to elevate your everyday cheese and cracker combo.
Bacon Wrapped Pickles are tangy and smoky and make an exceptional appetizer or game day treat. Maple Bacon Carrots are sure to please as a side dish.

Winter Vegetables
Can you eat locally all year round? YES! We make it a priority at the 1909 Culinary Academy to cook with local ingredients whenever possible. (and it is possible)
What’s on the menu? We’ll start with a classic french dish of Ratatouille featuring eggplant, zucchini squash, and tomatoes along with a variety of herbs. Our Thai inspired butternut squash soup is always a favourite and sure to warm you up on a blustery winter day. Full of beta carotene, vitamin C, and potassium, sweet potatoes and chickpeas will make this curry a nutritious and delicious winter option that is an 30-minute meal and ideal for any weeknight dinner.

During this class we’ll create a classic beef stew, a savoury Nigerian Vegetable Stew, and a Gumbo inspired by the cuisine of New Orleans.

About the 1909
Fittingly named after the year it was built, The 1909 Culinary Academy, has been converted into a chef-owned, restaurant style kitchen and private, hands-on culinary facility.
Built In 1909, this schoolhouse presents a lesson in community heritage stewardship.
Inside, original details are everywhere, and include the blackboards, decorative tin ceiling, trim, doors, wainscoting, hardwood floors, and original dual entry foyer. After being closed to elementary students in 1965, the building was maintained for regular community events by the Townline Social Club, the school has always doubled as a social gathering place. Until 2018, this majestic building sat empty.
